- Preheat the oven to 180°C and grease and flour a cake pan.
- Peel, core, and cut the pears into small, even cubes. Set aside.
- In a mixing bowl, whisk the eggs and sugar until pale and fluffy.
- Add the melted (cooled) butter, vanilla extract, and salt. Mix until smooth.
- Sift in the flour and baking powder. Mix gently until combined. Add milk if needed for a softer batter.
- Fold in the diced pears carefully using a spatula.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 35 to 40 minutes until golden and a knife inserted comes out clean.
- Let the cake rest for 10 minutes before unmolding onto a rack. Cool completely before serving.
Notes
Use ripe but firm pears to avoid excess moisture. Toss pear cubes lightly in flour before adding to prevent sinking. Dust with powdered sugar before serving for an elegant finish.
