- Peel or leave the potato skins on, wash the potatoes, and cut them into even ½-inch cubes. Toss thoroughly with olive oil, salt, black pepper, garlic powder, and paprika. For the air fryer method, cook at 400°F (200°C) for 20–25 minutes, shaking the basket 2–3 times. Alternatively, roast on a parchment-lined baking sheet at 425°F (220°C) for 25–30 minutes, flipping halfway, until golden and fork-tender.
- While the potatoes cook, heat a large skillet over medium heat. Add the ground beef and chopped onion. Cook, breaking up the meat with a spatula, until the beef is no longer pink and the onion softens, about 6–8 minutes. Drain excess grease if needed. Season with salt, pepper, onion powder, and paprika. Stir in the minced garlic and cook for 30–60 seconds until fragrant.
- Add the Worcestershire sauce, tomato sauce, ketchup, mustard, and BBQ sauce. Stir well to combine. Reduce the heat to low and simmer for 5–7 minutes so the flavors meld and the sauce thickens slightly. Taste and adjust the seasoning as desired.
- Once the potatoes are crispy and ready, add them to the skillet with the sloppy joe mixture. Gently fold everything together so the potatoes are coated without becoming mushy. Sprinkle the shredded cheese evenly over the top. Cover the skillet for 2–3 minutes to melt the cheese, or transfer the oven-safe skillet to the oven and broil for 2–4 minutes until bubbly and golden.
- Garnish with dried parsley, green onions, or diced pickles if desired. Serve hot straight from the skillet.
