- Preheat the oven to 180°C and grease a cake pan or line it with parchment paper.
- In a large bowl, whisk the eggs and sugar until the mixture becomes pale and slightly fluffy.
- Add the almond flour and gently mix until fully incorporated.
- Pour in the melted butter and almond extract, then mix until smooth and homogeneous.
- Transfer the batter into the prepared pan and smooth the top.
- Bake for about 30 minutes until the top is golden and a knife inserted in the center comes out clean.
- Allow the cake to cool completely before removing from the pan to avoid breaking.
Notes
This cake is naturally gluten-free and can be customized with lemon zest, orange blossom water, or even chocolate chips. It keeps well for several days and becomes even more flavorful the next day.
