Ingredients
  

Almond Cake Batter
  • 3 eggs room temperature
  • 150 g granulated sugar
  • 150 g almond flour finely ground
  • 75 g butter melted and cooled
  • 1 tsp almond extract optional

Method
 

  1. Preheat the oven to 180°C and grease a cake pan or line it with parchment paper.
  2. In a large bowl, whisk the eggs and sugar until the mixture becomes pale and slightly fluffy.
  3. Add the almond flour and gently mix until fully incorporated.
  4. Pour in the melted butter and almond extract, then mix until smooth and homogeneous.
  5. Transfer the batter into the prepared pan and smooth the top.
  6. Bake for about 30 minutes until the top is golden and a knife inserted in the center comes out clean.
  7. Allow the cake to cool completely before removing from the pan to avoid breaking.

Notes

This cake is naturally gluten-free and can be customized with lemon zest, orange blossom water, or even chocolate chips. It keeps well for several days and becomes even more flavorful the next day.
