Ingredients
  

Base
  • 500 g fromage blanc 20% or 0% fat
  • 4 eggs separated
  • 100 g granulated sugar
  • 50 g flour or cornstarch
  • 1 packet vanilla sugar or lemon zest
  • 1 pinch salt

Method
 

  1. Preheat the oven to 180°C. Grease and prepare your cake pan.
  2. In a large bowl, whisk the egg yolks with the sugar until the mixture becomes pale and slightly fluffy.
  3. Add the fromage blanc and mix until smooth and creamy. Incorporate the flour or cornstarch and mix well.
  4. In another bowl, beat the egg whites with a pinch of salt until stiff peaks form.
  5. Gently fold the egg whites into the batter using a spatula, lifting from bottom to top to preserve the air.
  6. Pour the batter into the prepared pan and bake for 35–40 minutes until golden and slightly firm in the center.
  7. Turn off the oven and let the cake cool inside with the door slightly open to prevent collapse.
  8. Allow to cool completely before serving. Chill in the refrigerator for best texture.

Notes

For extra flavor, add lemon zest or fresh berries before baking. Ensure the egg whites are well incorporated gently to keep the airy texture. This cake is best served chilled for optimal firmness and taste.
