- In a small bowl, dissolve the yeast in lukewarm milk and let sit for 5 to 10 minutes until foamy.
- In a large bowl, combine flour, sugar, and salt.
- Add the egg, yogurt, and yeast mixture, then knead for about 10 minutes until the dough becomes smooth and elastic.
- Cover the dough with a clean towel and let it rise in a warm place for 1.5 to 2 hours until doubled in size.
- Punch down the dough and divide it into small equal portions (about 60–80 g each).
- Shape into balls and place them on a lined baking tray, spacing them apart.
- Cover and let rise again for about 45 minutes.
- Preheat the oven to 180°C.
- Brush the brioches with egg wash or milk.
- Bake for 15 to 20 minutes until golden brown.
- Let cool on a wire rack before serving.
Notes
For a healthier variation, you can replace sugar with honey or use plant-based yogurt. These brioches freeze well and can be reheated briefly to regain their softness.
