Ingredients
  

Brioche Dough
  • 500 g all-purpose flour type 45 or 55
  • 125 g plain yogurt 1 pot
  • 1 egg
  • 80 g granulated sugar
  • 100 ml milk lukewarm
  • 7 g dry yeast or 20 g fresh yeast
  • 1 pinch salt
Egg Wash
  • 1 egg yolk optional for brushing
  • 1 tbsp milk for brushing

Method
 

  1. In a small bowl, dissolve the yeast in lukewarm milk and let sit for 5 to 10 minutes until foamy.
  2. In a large bowl, combine flour, sugar, and salt.
  3. Add the egg, yogurt, and yeast mixture, then knead for about 10 minutes until the dough becomes smooth and elastic.
  4. Cover the dough with a clean towel and let it rise in a warm place for 1.5 to 2 hours until doubled in size.
  5. Punch down the dough and divide it into small equal portions (about 60–80 g each).
  6. Shape into balls and place them on a lined baking tray, spacing them apart.
  7. Cover and let rise again for about 45 minutes.
  8. Preheat the oven to 180°C.
  9. Brush the brioches with egg wash or milk.
  10. Bake for 15 to 20 minutes until golden brown.
  11. Let cool on a wire rack before serving.

Notes

For a healthier variation, you can replace sugar with honey or use plant-based yogurt. These brioches freeze well and can be reheated briefly to regain their softness.
